Easy Campfire Apple Crisp

Fall is a great time to go camping in the Midwest. The weather is usually a little more mild and the changing leaves provide a great backdrop for a weekend outdoors. Fall also puts us in the mood for fresh and seasonal produce, like apples! Enjoy this recipe for Easy Campfire Apple Crisp that can easily be made over a fire, grill, or home stovetop. This Apple Crisp combines the sweetness of apples and brown sugar with smoky flavor from the fire and a splash of bourbon. It gets its great crunch and texture from a homemade granola that comes together in 30 minutes or less. Prepare the granola ahead of time to spend less time cooking and more time exploring.

Easy Campfire Apple Crisp

This recipe is dairy-free and ALMOST vegan (you can sub the honey for Agave or omit altogether).

Recipe Prep

When making this recipe, especially if you plan to take it camping, it is a good idea to do a little bit of prep ahead of time. 

First, make sure you have packed:

- Cast iron skillet

- Hot pads (at least 2)

- Cooking spoon or spatula

- Serving spoon or spatula

- Cutting board and knife

- Measuring cups (or measure ingredients ahead of time)

- Ice cream + scoop

- Supplies for cleaning up after

- All ingredients for Apple Crisp

 

 

There is also an option to make your own granola for the crisp. Use the easy recipe below or just buy your favorite granola if you don't have time to prep it before camping.

Favorite Homemade Granola

This will be your new go-to granola at home. With just 7 ingredients, it comes together in just about 30 minutes.  

 

Ingredients:

  • 3 tbsp melted coconut oil

  • 1/4 cup pure maple syrup

  • 2 tbsp honey (or agave for strict vegan)

  • 1.5 tsp pure vanilla extract

  • 1/4 tsp salt

  • 1.5 cup sliced almonds

  • 2 cups old fashioned rolled oats

Instructions:

  1. Pre-heat oven to 300 degrees F and move the center rack up a level so it is on the second level/rack from the top.

  2. Line a rimmed baking sheet with parchment paper. Set aside. 

  3. In a large bowl, whisk together coconut oil, vanilla, honey, and salt.

  4. Add your sliced almonds and oats and fold the mixture together.

  5. Carefully pour the granola onto your parchment-paper lined baking pan. If you want large chucks of granola, flatten the mixture into an even layer with a spatula, adding a bit of pressure so the granola is compact.

  6. Bake for 20 minutes and then rotate the pan 180 degrees for even cooking. Bake for an additional 15 minutes until golden. 

  7. Once you've removed your granola from the oven, allow it to cool completely on the baking sheet. 

This recipe will keep in an airtight container for up to 2 weeks.

Easy Campfire Apple Crisp

This Campfire Apple Crisp would make for a great camping dessert. It's easy to put together and takes only 15 minutes to cook. 

Ingredients (serves 4):

  • 2 tbsp vegetable oil spread

  • 2-3 apples, sliced 1/4 inch thin

  • 2 tbsp bourbon

  • 1/4 cup brown sugar

  • 1 tsp cinnamon

  • 1 cup granola 

  • Dairy-free ice cream of choice (optional but highly recommended)

Instructions:

  1. In a cast iron skillet, over medium heat (could be fire, grill, or stovetop), saute the sliced apples in the vegetable oil spread until just beginning to soften, about 5 minutes.

  2. Add the bourbon, sugar, and cinnamon. Continue coking until the sauce thickens and the apples are tender, about 5-10 minutes.

  3. Remove from the heat and sprinkle the granola evenly across the top. Enjoy straight from the skillet or serve in individual bowls. 

  4. Don't forget to top it with your favorite dairy-free ice cream!
